Easy Rice and Chicken Recipe


  • 1 cup of white rice

  • 2 cups of water

  • 1 lb boneless, skinless chicken breasts, cut into small pieces

  • 1 tbsp olive oil

  • 1/2 onion, chopped

  • 2 cloves of garlic, minced

  • 1/2 tsp paprika

  • 1/2 tsp cumin

  • 1/2 tsp dried oregano

  • Salt and pepper to taste

  • Fresh parsley for garnish


  1. Rinse the rice under cold water and drain well. In a medium pot, combine the rice and 2 cups of water. Bring to a boil, then reduce heat to low and cover. Cook for 18-20 minutes, or until the water is fully absorbed and the rice is tender.

  2. While the rice is cooking, heat the olive oil in a large skillet over medium-high heat. Add the chopped onion and sauté for 2-3 minutes, or until translucent. Add the minced garlic and cook for another minute.

  3. Add the chicken to the skillet and season with paprika, cumin, oregano, salt, and pepper. Cook for 7-10 minutes, or until the chicken is cooked through.

  4. Serve the chicken over the cooked rice and garnish with fresh parsley. Enjoy!
